Rice Cooker Pulled Pork

Many have said it couldn't be done, but guess what?! You can totally make pulled pork in a cheapo rice cooker. I've never owned a Crock-Pot but now that I've figured out now to make delicious juicy pulled pork with homemade bbq sauce in my little 4 year old rice cooker, I'll never have the need to buy one.


I busted out about 3 lbs. of frozen pork shoulder from the freezer and tossed it in the rice cooker with:
  * 1 cup white beans
  * 1 medium sized onion, chopped 
  * 1/2 cup ketchup (I use the kind with real sugar, not high fructose corn syrup)
  * 1/4 cup tomato sauce
  * 1/3 cup apple cider vinegar
  * 1/4 cup brown sugar
  * 3 tablespoons Worcestershire sauce
  * 1 1/2 teaspoon sea salt
  * 1 teaspoon course ground black pepper

After about 6 hours, the meat will start to fall off the bone. Go in with two forks and shred it. The sauce will have thickened- the meat will soak it up as it cooks more. After another hour of simmering, the meat will be so tender, it melts in your mouth. Serve on a soft potato bun with the homemade sweet & tangy bbq sauce from the cooker.

The leftovers also make for a great brekkie. Serve the reheated pulled pork over toast, grilled zucchini and top it off with a poached egg. Salt & pepper to taste. It's boyfriend approved. :)
